Oatmeal Cranberry White Chocolate Chip Cookies Recipe
To mark National Cookie Month this October, we are sharing one of our office favorites, Angie Kennedy Lee’s oatmeal cranberry white chocolate chip cookies. The combination of oats, cranberries, and white chocolate makes for a classic recipe worth adding to your kitchen.
Ingredients for Oatmeal Cranberry White Chocolate Chip Cookies
1 cup butter, softened
1 cup brown sugar
½ cup granulated sugar
2 eggs
2 tsp vanilla
1 ½ cup flour
1 tsp baking soda
1 tsp salt
¾ c dried cranberries
1 cup white chocolate chips
3 cups of oats
Directions to Bake the Cookies
Beat the butter until smooth. Add the brown sugar and granulated sugar and beat until well creamed, about 2-3 minutes.
Add the eggs and vanilla. Beat until well combined.
Add flour, baking soda and salt; mix on low speed until just combined.
Add oats, cranberries and white chocolate chips; mix until combined
Cover and chill the dough for one hour.
Preheat oven to 375 degrees.
Scoop balls of dough onto cookie sheets lined with parchment paper.
Bake cookies for 9-11 minutes or until lightly browned on the sides.
